Rice is a traditional food for many people in different countries in this world especially in Asia and Europe. Food tastes have an important role in the lives of Qataris as it is an important social and family ritual, and each of us relates to dishes that remind him of his childhood.

Reason for naming:

Kabsa is of Spanish origin, and it was called” descanso”, but the name of the meal changed over time, and some say that the reason for calling the Kabsa (Machboos)is the way it was prepared, which is by pressing the ingredients together.

One of the amazing Qatari food is Machboos (kabsa).

ingredients:

1 kg shredded chicken

1 kg rice soaked in water

2 tomatoes cut into cubes

   one sliced onion

2 teaspoon tomato sauce

2 cups of water

4 lemons’

½ teaspoon Curcuma

    salt & black pepper (as you want)

2 teaspoons of Arabic spices

½ teaspoon of ginger paste

½ teaspoon of garlic paste

    one cinnamon stick

 3 carnations

  4 cardamoms

  4 bay leaf

    oil (as you want)

How to prepare:

1.     Put oil in a pot on the stove, add onion, and mixed it till its color change.

2.     Add chicken, Arabic spices, Curcuma, and black pepper and mix till the chicken is roasted.

3.     Add garlic, lemon, tomato, tomato sauce, ginger, and mixed

4.     Add green pepper to the mix, then add water till it boils and chicken is cooked.

5.     Take the chicken and put it in the oven tray in the oven.

6.     Add rice in 7 cups of chicken sauce.

7.     When it is ready put chicken on the rice on the stove for 30 min

8.     Now the Kabsa (Machboos) is ready.

Nutritional information:

Kabsa nutritions will vary substantially based on the amount and the type of ingredients used in preparation
